Kayaking

So I finally did it I went Kayaking. It was amazing. I loved that it was so peaceful and calming I think I might get more relaxation out of Kayaking then I do with yoga lol. It’s late here so I will leave you with a few pics from our trip so far. Feeling better

So when I was on the road I didn’t eat the best foods which cause some tummy issues. I never though I would be lacking fiber in my diet lol. But while on the road I guess I did and had some issues. Now that I am getting my eating back on track I feel a lot better. My energy levels are coming up and my stomach issues are going away. It’s nice that my body is adapting so well. As some off you know I have IBS and when my eating gets off track so does my whole system. I love that I have found a healthy way to eat that is not only helping me lose weight but also helping with my IBS symptoms.

I’m hoping to do some Kayaking while I’m at my in laws they live right on the lake and the views are amazing.  But here’s something you don’t know about me. I have a fear of lakes. Well to be fair not just lakes but anything that I can’t see the bottom of and I don’t like the feel of weeds of any kind on my feet. I have this irrational fear or a snack or a fish getting me lol. You would think that a mom of three could handle a lake but I really have to talk myself into it lol. But it really is an experience I am hoping I can have.

Fun in the Sun

Yesterday was the first day we were at my in laws and we didn’t have to be on the road. It was wonderful. The kids played on the play structure and in the pool and are starting to relax after all that driving.

My back and knee have been pretty sore from all the driving and even my feet have been swelled up from retaining water. So to be able to float around in a pool for a few hours was such a relief on all of my aches and pains.

The drive was really nice and I hope to post some pics asap. Canada really is a beautiful country we saw it all the mountains and the ocean, the great lakes, the plains, trees of all kinds. We even got to see some wildlife some elk and deer, a coyote and some rabbits. We saw gophers and mice and skunks.

I’m still adjusting to the time change since our driving schedule was so crazy and I have to admit that I am not bouncing back as quickly this time as I normally would. I think part of it is we usually fly, another part is our sleep pattern has been wonky the past week and also my youngest seems to want me or any adult to lie down with him till he falls asleep. It took four hours but he’s finally sleeping now.

It’s late again here so I’m off to bed once again. See you tomorrow 🙂

The best plans sometimes fail

Well I haven’t blogged in a few days because I was busy on an epic road trip. We are driving across Canada this summer to visit family and attend my brothers wedding. I have to say I had the best plans laid out. I had my shakes and my cooler and I wasn’t going to go off plan one bit. LOL Guess what after driving for 6-12 hours a day the last thing I wanted to do was go into a grocery store to get my food to heat up at the hotel. I wanted whatever someone else was cooking and I didn’t care if that meant a sandwich from Subway or room service in our hotel. And guess what in the morning after spending hours to get the kids to sleep and having only 3-5 hours of sleep a night I wanted the complimentary breakfast not because it was the most appealing food in the world but because I was simply to tired to even go to the ice machine to get ice to make my shakes. And you want to know something. I didn’t gain a pound. In fact I am still losing weight. I did my best with the food options I had and I still managed to keep losing weight. I didn’t stress about my weight except for the last night we were in a hotel and I noticed they had a scale I could weigh myself on.

 

Here’s the lesson that I learned while on this trip. You can’t plan everything and it’s ok to enjoy a steak while in Alberta(it was delicious), it’s ok to have Mcdonalds at 9 pm on the night you get to your in laws, it’s ok to have a bowl of lucky charms but it all needs to be in moderation and as soon as you can go back to your healthy eating lifestyle.

It’s pretty late here so I’m off to bed. I’m hoping I can blog some more tomorrow 🙂

Healthy pancakes!

As well as trying to make healthier choices for myself I am also trying to get the kids to eat healthier without having a huge battle at every meal. My oldest son is an extremely picky eater and has been eating cheerios as his breakfast since he was old enough to eat them. Now I don’t have anything against Cheerios but I wanted some protein into this little guy since he has always been slightly underweight. He is so picky he doesn’t like any of the typical breakfast foods like eggs or bacon. After a lot of trials I have found a protein pancake winner! The pictures shows pumpkin protein pancakes but my sons favourite are apple cinnamon. So I will post the recipe for the apple cinnamon and I hope your family enjoys them as much as we do.

Apple Cinnamon pancakes

6 egg whites

1/2 cup apple sauce or cut apple(without the peel)

1/2 cup cottage cheese

1 cup oatmeal

1 tsp cinnamon

Put everything in the blender and mix. You might need to add some more oatmeal if you don’t find the batter thick enough. Cook pancakes in a non stick skillet on medium high until cooked thru.

 

* if you would like to make the pumpkin recipe remove applesauce and add 1/4 cup pumpkin puree and replace the cinnamon with pumpkin pie spice.

 

 

 

Yogurt

I am quite picky when it come to yogurt. It can’t be too sweet or too sour and it can’t be too thick or too thin. So what is a picky yogurt eater to do make her own!

Now don’t be scared it’s not going to be a 30 step process here it’s quite simple to make your own yogurt. All you need is a pot, thermometer, crockpot, towels, cheese cloth and a strainer. a yogurt starter and some milk.

I strain mine because I like it thicker but you can skip this step if you don’t mind it a little thinner. In fact before I strain it I remove some of the yogurt and make the kids some home made YOP yogurts. I just blend the yogurt with whatever fresh or frozen fruits I have on hand.  Once it’s the thickness that I like I put it in the fridge and wait for it to chill and then enjoy. Sometimes I have it plain. Sometimes I put some frozen berries in and other times I add honey. The opportunities are really endless.

Eat what you love

I talk to a lot of people who are dieting or eating healthy and eating foods they don’t even like to shed a pound. Well I can tell you for sure that this will not work for long and you will be running back to your favourite foods. Weight loss isn’t about depriving yourself it’s about eating healthy foods that you love. If you have to choke it down don’t bother eating it. I do have to say that the healthier you eat the more foods you will love. Your taste buds do change if you change what your eating. I was a huge sugar addict and I was always chasing the sweetness but now I am learning to enjoy the natural sweetness of fruits and some veggies instead of cakes and chocolates. I thought I would share some of my favourite snacks. Feel free to add your favourite snacks in the comments.

Liberte Greek yogurt banana caramel is my favourite

spinach and cucumber salad with almonds and lemon poppy seed dressing or just a squeeze of lemon

butter lettuce stuffed with cooked chicken with a squeeze of lemon

cheese string with pepperettes (ham, chicken or turkey I love them all)

hummus and veggie cups are great for on the go snacks

home made yogurt with berries and a touch of honey (check back for a post with recipe for yogurt)

watermelon with almonds

cantaloupe and prosciutto

I try to always have a source of protein and fiber with every snack so I stay full and satisfied till the next meal.

 

 

Packing for the big trip

Happy Canada day!

Canada Day in Ottawa

So it’s Canada day here and most people are enjoying the festivities but we are staying home and keeping a low profile. Why? Well because we are packing for our trip across Canada for my brothers wedding. It’s going to take us 7 days with the three little ones in tow and a full van lol. I am planning on staying on plan while driving across the county. I have my shakes and blender packed as well as my measuring cups. And the thing I am the most excited about we bought a cooler that we can plug in, no ice needed. So I will have that stocked with all of my healthy snack options like yogurt, cheese strings, chicken, hummus and much more. We are planning on eating out of our cooler for 1 to save some cash but mostly so that we can eat healthy. I am not going to let this trip be an excuse to gain weight or go off plan. I won’t be as strict as I am at home I do have some take out meals planned. There are some restaurants in Ontario that we don’t have in BC that I am really excited to go to. I will be sure to take some pictures of the yummy food we eat. Also our first day of travelling will be a 12 hour drive so I am going to eat out for sure on that day.

 

Here’s the thing I have learned about weight loss. It’s not about depriving yourself but it’s about have a nice meal out every once in a while. Now I know that’s not really defined but I know some people who eat out once a week and others once a month and others only for special occasions. I think you need to do what works for you. The only thing I would say is if your going to eat out make sure it’s something worth eating. I am finding that I am liking sit down restaurants a lot more the drive thru foods.

Well I’m off to finish packing our clothing and food so we can head out ASAP tomorrow morning!   Stay safe everyone!
