On Tuesday I have my two year follow up with the Dr. I was sent a requisition to go get some blood work done before the appointment. I don’t think I will ever get use to how much blood they need to get all of the testing done. I think there was either 8-9 vials that they had to fill. I was able to check some of my results online and I am pretty sure I will be getting some more supplements added to my list of supplements to take. I seem to be suffering from low Iron, Vit D and B12. We will have to figure these issues out and I am pretty sure we will get it all sorted when I see the Dr.
So I had challenged myself not to buy any groceries till we depleted some of our stock that we accumulated in the cupboard and freezers. We have been doing good at that but I did have to go out and get some ingredients. My kids had a socials assignment to try foods from different places around the world. We made some sushi, some vegetable Couscous, greek pita pizza’s and a tropical fruit salad. It was fun for the kids and myself to try some new foods. We really liked making sushi and the fruit salad. The kids loved the pizza but the couscous was definitely not a hit in the house. Here’s some pictures of what we have been eating
