Pizza Muffins

These delicious muffins are a quick and delicious way to make pizza without going thru the effort of making the dough or picking up the phone and ordering take out. They’re also portable so you can take them with you as you’re heading out the door. You can make them basic like I did here or add in any fixings you would to your favourite pizza.

The best part about these muffins is they start with a base of Bisquick baking mix and other staples your most like to have around the house. And they only take 15 minutes to bake. That’s faster then grabbing take out and will also save you some cash.

I made this batch regular size muffins but you can also make them into mini muffins for a party or toddlers.

Pizza Muffins

Servings 12 muffins

Equipment

  • muffin tin
  • mixing bowl
  • mixing spoon
  • Measuring cups and spoons

Ingredients

  • 1.5 cups Bisquick mix
  • 1 cup shredded mozzarella
  • 1 tsp italian seasoning
  • 2 eggs
  • 1/2 cup milk
  • 1 cup cut up pepperoni
  • 1/2 cup pizza sauce

Instructions

  • Preheat oven to 375 degrees
  • Mix all ingredients except pizza sauce in a large mixing bowl. Divide into greased 12 regular muffin tins or 24 mini muffin tins
  • Bake 20-25 minutes or until a toothpick comes out clean. Serve with warmed pizza sauce for dipping.

Date Night-Slow cooker Hamburger Potato Casserole

Another at home date night. I wanted to make this meal in the slow cooker because it was so hot and humid I knew if we didn’t throw out dinner together we would end up grabbing some take out. I’m so glad I made this. Simple ingredients all brought together and slow cooked for hours just made all the flavours that much better. This makes a lot of food and I’m sure if you are a larger family you could stretch this meal for not too much extra cash by adding more corn or potatoes. Here’s a link to the recipe I used. I do have to admit I didn’t add the cheese on top and it was still delicious. If you haven’t yet check this blogger out on YouTube you really should. We are loving our at home date nights. We can listen to music or not and be able to have a nice conversation without the hustle and bustle of a restaurant atmosphere. Don’t get me wrong there’s a time and place for eating out, but it can also be equally special staying in.

Slow Cooker Ham

With the warm weather approaching and life being as busy as ever, I love utilizing my crockpot. It’s my fail proof way of knowing I won’t be tempted to get take out because there’s a delicious meal cooking away. Now I still have to make some sides with this ham, but it could be as simple as a fruit and veggie platter and call it a meal. I wish this recipe was mine as it’s delicious, however we first tried the glaze I put on this ham at my brother in laws. His wife had made a delicious ham and now when my kids see a ham defrosting they tell me I have to make it like their Aunty. Here’s the link to the recipe she sent me.

It’s quick to put together. I secure the Pineapple rings to the ham make the above glaze and turn the crockpot on low for 6-8 hours. Once you try this glaze you will never go back. It makes the ham delicious and juicy.

Breakfast for Dinner

I am a huge fan of breakfast foods. However I am far from being a morning person lol. So what better way to enjoy the foods you like then to make Breakfast for Dinner. I also had my youngest asking me for some Greek yogurt pancakes I had made previously. The kid has taste as these pancakes come from my Pioneer Woman cookbook. Don’t worry here’s a link I found to the recipe we used. These pancakes are delicious and fluffy and we may have added a few chocolate chips when cooking them.

I wanted to have something besides pancakes so I decided to make a breakfast Casserole. It was delicious and more then enough to feed us for a few day. So leftovers for breakfast lol. This recipe couldn’t be any easier to make come together. I used some frozen potatoes that had bacon bits, onions and bell peppers already in it, some shredded cheese, some cottage cheese and some eggs. Don’t worry I’ll give you the measurements down below in the recipe card. But if you’re comfortable in the kitchen you can pretty much add whatever you want to this casserole.

Breakfast Casserole

Course Breakfast, Main Course
Servings 15

Equipment

  • 9×13 baking dish

Ingredients

  • 6 large eggs
  • 4 cups Frozen potatoes O'Brian this dish will cook faster if you defrost your potatoes first but if you forget just a longer cook time
  • 1 cup Shredded cheese of your choice
  • 1 cup cottage cheese
  • 1/2 cup Bacon bits or cooked diced bacon
  • salt and pepper to taste

Instructions

  • Preheat oven to 350.
  • In a large mixing bowl stir all the ingredients together. Pour into the greased 9×13 baking dish
  • Cook for 40-60 minutes or until eggs are set and everything is cooked thru.
  • Enjoy!

Notes

This recipe reheats well and freezes well if you want to meal prep. 

No Bake Cornflake Cookies

With the price of groceries rising day by day, I am finding myself looking at ingredients in my pantry. We have always been a family that likes to bake from scratch but I think it’s even more important to do so now. I’ve had a box of Cornflakes staring at me in the cupboard for quite a while now. My kids don’t love eating it as a breakfast cereal. So I was on a mission to find a recipe to not let the cereal go to waste. There are several no bake cookies for Cornflakes but I settles on one that also uses marshmallows since I had some of those leftover from this winters hot chocolate bar area. My 11 year old and I have a blast making these cookies and they came together pretty quickly. I would mention that after making the recipe as written, the peanut butter lovers in us would add more peanut butter next time. This recipe is definitely being printed and added to the family cookbook. Here’s a link to the recipe we used today. I hope you give these a try especially since the warm weather is coming, and you probably won’t feel like turning on the stove.

Father’s Day Lunch!

Happy Fathers Day!!!! I wanted to make a special meal today but I’m still not feeling 100% from surgery. I wanted something special that didn’t take too much time to prepare since standing up still pulls on the stitches. So I came up with this! Not so much of a recipe as it was using up some items I had on hand. I called it a chicken parmesan garlic bread. I started by taking some leftover roast chicken and mixing it with some leftover pasta sauce. I then opened up a garlic bread and put the chicken mixture on the bottom half. On the top half I added some mozzarella cheese since it’s what I had on hand. Cooked at 350 for 15 minutes then broiled till the cheese was melted and browned. It was delicious and got some leftovers out of the fridge so that was a bonus. Sometimes the meals we come up with on the fly are the best meals we make and keep coming back to. This just might be one of those meals.

Cake Mix Banana bread

Do you ever just have that random cake mix starring you in the face and you want to make something delicious? Well I decided to do a little experimenting as I didn’t just want to make a cake and came up with this delicious Chocolate Banana Bread recipe. And the frosting couldn’t have been any easier I simply melted peanut butter chips on one loaf and chocolate chips for the second loaf. Scroll down for the recipe 🙂

Chocolate Cake Mix Banana Bread

Makes 2 loafs

Equipment

  • 1 mixing bowl
  • Measuring cups and spoons
  • 2 Bread Pans
  • whisk
  • Rubber Spatulla

Ingredients

  • 1 box chocolate cake mix
  • 3 large eggs Or whatever your cake mix calls for
  • 1/2 cup oil Or what your cake mix calls for
  • 1 1/4 cups milk Or what your cake mix calls for
  • 1/2 tsp salt
  • 1/2 tsp cinnamon
  • 1 tsp baking soda
  • 3 medium mashed bananas
  • 1/2 cup peanut butter chips melted Optional for frosting your bread when cooled
  • 1/2 cup chocolate chips Optional for frosting your bread when cooled

Instructions

  • Preheat Oven to 350 degres.
  • In a mixing bowl mix all ingredients. Pour two greased bread pans. Bake 40-45 minutes.
  • Optional: melt peanut butter and or chocolate chips and ice cooled banana bread. Or top with frosting of your choice.

Pizza Roll Ups

The other day my friend was gracious enough to keep two of the kids overnight. I was headed into surgery the next day and had a bunch of nervous energy. What better way to channel that energy then to bake some pizza rolls ups to send along with the kids. I used my basic pizza dough recipe but instead of flattening it out into a round I made it a rectangle and cut into rolls. The best part about this recipe is the dough is made in the bread machine so there’s not much hands on needed but it’s definitely a crowd pleaser. This recipe is so versatile as you can add whatever you want into this dough… today it’s pizza maybe tomorrow it will be BBQ chicken roll ups the possibilities are endless. I hope you try and enjoy these.

Pizza Roll Ups

A handheld twist on pizza.
Servings 15

Equipment

  • Bread machine
  • Measuring cups and spoons
  • 9×13 baking dish
  • knife

Ingredients

  • 1 cup warm water
  • 2 tbsp olive oil
  • 1 tsp sugar
  • 1 tsp salt
  • 2 1/2 cups flour
  • 2 1/4 tsp yeast
  • 1 tsp Italian seasoning
  • Pizza toppings of your choice I used a bit of pizza sauce, pepperoni and cheese

Instructions

  • In bread machine add all ingredients except toppings. Press dough cycle.
  • Once dough cycle is done roll dough on lightly floured surface into a rectangle.
  • Put a thin layer of pizza sauce and top with toppings.
  • Roll away from you from the long side(like you would cinnamon rolls).
  • Slice into 15 rolls. Put in greased 9×13 pan and allow to rise for 40 minutes.
  • Bakes at 400 for about 15-20 minutes. Serve with a side of pizza sauce to dip.

Oatmeal Banana muffins

Do you ever have the urge to bake with your kids but then suddenly change your mind because you don’t want all the dishes that go with baking? Well then this recipe is for you. You throw all the ingredients in the blender and blend on high to combine. The best part of this besides not having a bunch of dishes is you can let the kids make these on their own and sit back and enjoy a cup of coffee. The kids will feel proud and you can enjoy the fruits of their labor 🙂

Oatmeal Banana Muffins

Easy and delicious recipe that even kids can make on their own!

Prep Time 10 minutes
Cook Time 20 minutes
Servings 12

Equipment

  • Blender
  • Measuring cups and spoons
  • muffin tin

Ingredients

  • 2 1/2 cups Oatmeal
  • 1/2 cup Greek yogurt
  • 2 large Eggs
  • 1/2 cup Brown Sugar You can use white sugar if that's what you have on hand or a sugar substitute
  • 1 1/2 tsp Baking Powder
  • 1/2 tsp Baking Soda
  • 2 very ripe bananas if your bananas are very ripe you won't need to cut into chunks but feel free to do so
  • 1/2-1 cup chocolate chips optional

Instructions

  • Preheat oven to 400 Degrees.
  • Place all ingredients except chocolate chips in blender and blend till smooth. If using chocolate chips stir in them in by hand now.
  • Pour muffin batter into greased or silicone lined muffin tin. Bake for 20 minutes or until toothpick inserted come out clean.

Date Night-Middle Eastern Beef and Sweet Potato Bowls

We have the privilege of living in a beautiful town close to the Ocean that isn’t a huge town. Those are just some of the plus sides to where we live. The downside however is in order to get a broad variety of food diversity we need to drive just over an hour. Thankfully as someone that has been thru culinary school and worked as a chef is a challenge I am ready to take on at home. This date night was no exception I was ready to create a fun meal that would delight my tastebuds and be somewhat healthy.

The first thing I had to do was create a spice blend I decided to make this one. Then I set out to make the meal.

Middle Eastern Beef and Sweet Potato Bowl

Servings 4

Equipment

  • 1 Sheet pan
  • 1 skillet
  • 2 Mixing bowls
  • Measuring cups and spoons

Ingredients

  • 2 medium sweet potatoes diced into bite size pieces
  • 2 tbsp oil
  • 3 1/2 tsp spice mix Link above
  • 1 medium onion diced
  • 2 small zucchini diced
  • 4 tbsp sour cream
  • 1 lb ground beef
  • 1 tbsp oil
  • 4 tbsp tomato paste
  • 1 tsp vegetable better than bouillon
  • 1/4 cup water
  • salt and pepper to taste

Instructions

  • Preheat oven to 425 degree. Place sweet potatoes and 2 tbsp of oil in a large bowl. Sprinkle with with half the spice mixture and toss to coat. Place on parchment lined baking sheet and cook for 20-25 minutes turning once halfway thru.
  • In a small mixing bowl mix sour cream with 1/4-1/2 tsp of the spice blend. Add water 1 tsp at a time till it can be drizzled.
  • Heat 1 tbsp oil in skillet over medium heat. Add onion and cook till soft about 3 minutes. Then add in ground beef, tomato paste, vegetable bouillon, water and remaining spice blend, salt and pepper. Cook 3 to 4 minutes crumbling the meat as it cooks.
    Add zucchini and continue cooking until beef is cooked thru about 3-4 minutes.
  • To serve divide potatoes among four bowls, top with meat mixture and drizzle with spiced sour cream.
