So normally I use chicken in my fajitas but I had a small roast defrosted and didn’t feel like making a traditional roast beef dinner. So this recipe can be made with beef, chicken, turkey or pork.
What you need
1 lbs of beef
1 onion slices
2 peppers ( or more if you really like peppers) sliced
1/2 cup of chicken broth or water
1.5 tbsp cumin
1 tbsp chilli powder
1/2 tsp salt
Juice of one lime
Place sliced veggies in crockpot. Add chicken broth. Place meat on top of veggies and add spices and pour lime juice on the meat. Cook 4-8 hours on low. Remove meat and shred it return to crockpot and mix with veggies. Serve with toppings of your choice.
I like to serve mine on a bed of salad instead of on a wrap but the possibilities are endless.
