What did we find in the kitchen and Harry Potter

Well I’ve been busy living life and I haven’t updated you all in a few days. So here’s what’s been going on.

 

I previously mentioned that I signed up for Beach Body On Demand. I am making good use of this program this time around. My son loves martial arts but they are expensive and with three kids it just wasn’t going to fit in the budget. But thanks to Beach Body me and the littles are doing the Core De Force program and loving it. I love that we can do this workout in our pj’s and all of us together.

 

The other really cool thing I did with the family this weekend was have a Harry Potter day. We are currently reading thru the books with the kids and watching the movies as we got. But this weekend we took it to a whole new level. We decide to to watch the third movie but also make our own wands and theme all our food after magic/ Harry Potter. For breakfast the kids had Cheri Owl( Cheerios) Pixie Puffs ( corn pops) and oatmeal. I had a banana bread breakfast bake since sugary cereal doesn’t agree with me and I wasn’t feeling in the mood for oatmeal. Lunch we had deconstructed pizza casserole. Then supper was suppose to be roast beef, Yorkshire puddings, roasted veggies and gravy but we ran out of time. So instead the kids had ham crackers and cheese and I had some donair chicken meat. We also made some Butter Beer and Rock Cakes!

On the other days here’s a list of foods we ate

yogurt

berries

double chocolate breakfast bakes

chicken parmesan wrap

chicken cordon blue wraps

chicken nuggets

home made pizza bagels and pigs in a blanket

roast beef with Yorkshire pudding and roasted potatoes and carrots and Gravy ( this is a small side plate by the way and I made the Yorkshire puddings mini)

and lots more that I can’t remember at the moment.

We are working our way slowly but surely thru the food that we have in our freezers. But I can tell you for sure that you can eat healthy and have fun themed days without worrying about it. I tried a sip of the butter beer on Saturday which wasn’t good for me since it had carbonation and I did have a rock cake.

 

What Did We Find In The Kitchen Day 2,3 & 4

Oops I forgot to upload what we ate the past few days so here it is.

On New Year Eve we started the morning off with blueberries with a lemony yogurt (I would love to share this recipe but it’s not mine to share, head over to My Bariatric Kitchen on facebook to find out how you can get the recipes)

For lunch we had some steak with Salad and leftover fajita peppers

And then for supper we ordered sushi

New Years day Menu

For Breakfast I had some Banana Foster Overnight Oatmeal

Lunch I decided to make a healthy Moussaka ( I will post the recipe in another blog)

And Supper was Roasted Lamb with salad that I forgot to take a picture of.

Safe to say we will be having leftovers today since I made big pan of moussaka and the lamb roast.

Hamburger soup

Today I’m going to keep it short and sweet and give you my recipe for Hamburger Soup

Ingredients

1 tbsp olive oil

1 lb extra lean ground beef

1 cup chopped celery

1 cup chopped onion

6-8 cups beef broth ( depending if you like a chunkier soup or more liquid)

1- 28oz can diced tomatoes(don’t drain)

1-19 oz can black beans rinced and well drained

3 tbsp tomato pasta

2 tsp Italian seasoning

salt and pepper to taste

3 cups mixed frozen veggies ( I like the carrot, pea, corn mixture instead of the ones with brocoli and cauliflower)

In a medium to large soup pot add oil and heat on medium. Add in the ground beef, celery and onions, cook till ground beef is browned. Then add the remaining ingredients. Bring to boil then turn heat down and simmer 15-20 minutes.

This recipe makes quite a bit of soup so you can either half the recipe or have some containers to freeze leftovers for a busy day.

So I have to be honest I thought I would have a lot more time to cook and show off all the amazing holiday recipes I have tried and tested. Sadly I tend to forget to take pictures and I just don’t have time to cook everything again. So instead what I’m going to do is give you tons and I mean tons of links to holiday foods. I usually make a recipe as it’s written at least once and then tweak it to my families liking after that. Have some fun with these recipes and make them your own 🙂

Finding the balance

I thought once I could add carbs back into my diet that I would have no issues. Well I was wrong trying to find the perfect balance between the proper amount of carbs and the proper amount of proteins is a real struggle. I seem to be able to hit my carb goal and then some no problem but now my protein is lacking.

Thankfully I can fix this. I have my chef’s papers and have been researching some delicious recipes that I’m excited to try and that fits into my allowed foods. This week I want to try a chicken teriyaki recipe and a few others. Now I have made chicken Teriyaki before but now I have to have low sugar foods for the time being so I’m experimenting with Splenda.

Now as I mentioned on my Facebook page I got the ok to slowly start some Zumba. What I didn’t mention was the reason I didn’t get the ok to start lifting weights. Last night was a night like any other where my husband was reading to the kids but my youngest started having a major meltdown. He threw himself at me and then as I was trying to get him to quiet down he jerked back and I instantly got a sharp pain. Ended up spending quite a few hours in the emergency getting looked over to make sure I didn’t cause any damage and ultimately ended up getting some extra strength tylenol. So I can’t lift any weight for at least another month because of this crazy ordeal.

I have to say that for those that have had to deal with medical staff with being overweight or obese don’t expect them to be happy to treat you after weight loss surgery. I went to the closest emergency since there was a wind storm here. The intake nurse was great and congratulated me on becoming healthier. But the nurse I dealt with in the emergency room he was another story. After explaining for the third time what happened he first lectured me on having to discipline my child better and then proceeded to tell me that since I had this surgery I should have stayed away from my kids for three months. Now I don’t know many mom’s that could keep away from their kids for that long. But I also think that for a man who has never met me or my kids he seemed to have a lot of opinions on children and how having weight loss surgery was a waste of time if I wasn’t going to take care of myself. I have been taking care of myself and this was the first incident in 6 weeks that happened. We are all adjusting to the changes. I once met a Dr that I will never forget. I had been having health issues and at the end of my rope when he told me that opinions are like a**holes everyone has one, but only a select few will let their opinions of how you look like, dress or act affect them, the others will get to know you then judge you. So last night I left knowing that I can;t change that nurses opinion but his opinion doesn’t need to affect me.
